With several outposts in Asia and the U.S., this West Hollywood outpost is a hive of activity. The price tag is high but so is the quality of the fish, including wild caught Hokkaido king salmon and five-day, dry-aged tuna from Northern Japan. Sake and wine are only available by the bottle or half bottle.Delights abound in the array of courses, as in a small, gold bowl of shima aji with sake sauce and shiso flowers; or an earthenware cup of chawanmushi topped with caviar and uni. The nigiri are a clear highlight here, revealing excellent quality product such as pen shell calm, cherry blossom salmon, and Hokkaido uni.
