True to his motto that the way to good health is through a balanced diet, Soda wields his Chinese cooking pots to create dynamic cuisine. Based on Sichuan and Shanghai culinary traditions, he whips up unique flavours using seasonings prepared from Chinese herbal medicine. Diners can choose how their fish is cooked, and with which seasonings; vegetable cuisine is prepared using crops raised by his family in Oita. Soda lets his individuality run especially free with the mapo dofu.
