Asakusa is the stage on which chef Takumi Nagami performs. Staying faithful to the native flavours of his ingredients, he brings to bear the seasonal elegance he learned in Kyoto. Soup stock is lightly seasoned so as not to overpower the main ingredients. Two options are available for appetiser platters: drinking snacks adorned with leaves or served in hollowed-out yuzu fruits. The kaminari-okoshi sweet rice puff snack is used as batter for fried items, in a tip of the hat to the chef’s beloved Asakusa.
