If you’re keen to try some authentic yet innovative Japanese cuisine, this restaurant bearing the signature of famous culinary maestro Hideki Matsuhisa, who has already tasted major success at Koy Shunka in Barcelona, is definitely this place. The Japanese-Mediterranean philosophy here is one that is not based on a fusion approach; instead, it is more of a reproduction of Japanese techniques but with the use of essentially Mediterranean ingredients, with addition of others from Galicia and Huelva. At the comfortable, U-shaped bar counter, with the kitchen in the middle of proceedings so that guests can watch the full preparation process, the culinary focus is always on seasonality on a concise à la carte that gives pride of place to classic dishes, plus two splendid tasting menus, Koy and Hermitage. A standout dish that we particularly enjoyed was the intensely flavoured Ebro Delta eel nigiri with an eel salsa.
