Narisawa brings Japan’s sustainable, naturalistic satoyama dining experience to Shanghai. The head chef has worked with chef Narisawa for 17 years and crafts the same menu as the Tokyo sister establishment, but with Chinese twists. Its iconic “Bread of the forest” is fermented and baked in a stone pot tableside and infused with white tea from Fujian. Chinese ham jazzes up the umami of the chicken and shellfish consommé.
