This restaurant with its genial atmosphere is managed by two sisters, the elder handling customer service and the younger working the counter as the sushi chef. Having embarked on this career after learning about how female sushi artisans are making an impact, the younger sister prizes the age-old practices of sushi: marinating, simmering and searing. Marinated tuna is dressed with mustard; conger eel is simmered until plump. Her previous career was in traditional physical therapy – through sushi and customer service she continues to bring comfort to the soul.
