At first sight, this restaurant, famous for roast goose, may have little to do with its name but semantically, its first shop was next to a bridge. And that name was in French because the owner was inspired to add fried scallion to goose fat for a now-popular condiment – just a drizzle can make any blanched leafy green a gourmet dish. Try steamed rice with goose fat, marinated goose egg with red yeast rice, and goose fat French fries.
