Foer certainly has character both in terms of the stylish decor – nab a place at the dining counter if you can – and the food. The focus here is on vegetables and herbs, perhaps complemented by a fish or meat dish. Using inventive preparation techniques, Steven Broere succeeds in elevating vegetables in original combinations. For instance, he marries intense beetroot cooked in a salt crust and an emulsion of egg yolk with subtle acidity to create a remarkable flavour sensation. The select wines add to this unique sense of harmony.
