A few metres from the Museum of the Brazilian House (MCB), on a quiet street in Jardim Paulistano, stands Tuju, an elegant three-storey building devoted entirely to gastronomy. The main entrance is on the ground floor, where the experience begins with small appetisers, and where the wine cellar and an inner garden are also found; on the first floor is the dining room, centred on a large open kitchen ringed with tables; and on the second, a large bar with a view. Chef Ivan Ralston, ably supported by a large team of cooks (most of them women), pursues gastronomy in a deep sense. He uses his expertise to combine seasonal Brazilian produce and flavours (especially from São Paulo) with the most modern techniques, always emphasising creativity and the hard graft of hidden research. Each season, with its climatic traits (Humidity, Rain, Wind and Drought), defines a tasting menu!
