Surrounded by their own permaculture garden, there is a strong sustainability ethos running through the very fabric of this restaurant in the hamlet of Friland; along with the ingredients, the wooden furniture is also sourced locally. While the restaurant is no longer fully vegetarian, the dishes would best be described as 'plant-led', giving vegetables the prominence they rarely receive. Guests can decide whether to have an 'omnivore', vegetarian or vegan version of the tasting menu (which also comes in a choice of lengths).
