This breathtakingly stunning building half-submerged in the sea provides a singular and spectacular setting in which to dine. The sense of anticipation grows as you descend the beautifully crafted oak-and-steel staircase to the dining room 5m under the sea, where panoramic windows afford an underwater view. It's no surprise to find plenty of seafood on the seasonal tasting menu, where superb produce, like sweet and juicy langoustine tail, is treated with a light touch and welcome restraint to bring out its natural flavours.
