Chapter’s façade of Corten steel slats leads into an open kitchen that produces unique flavours and textures over a charcoal grill. The single tasting menu features 10+ courses anchored in Vietnamese heritage, all artfully plated. A small clay house is set on each table and each course comes with a postcard in which the chef shares his memories. Globally sourced produce is combined with Vietnamese culinary heritage to great effect.
