The kitchen's focus remains steadfastly on the main ingredient, which is always of extraordinary quality – be it lobster from Cornwall or pigeon from Brittany. The accompanying flavours, including occasional international influences like yuzu kosho, are used to enhance this produce, resulting in dishes that stay long in the memory.
