Located just a couple of streets from Plaza Independencia in the centre of the city, this restaurant is striking for its level of comfort and the elegance of its contemporary and stylishly appointed dining space. Soberana boasts a pleasant terrace by the entrance, a cocktail bar and counter that has become one of the most dynamic areas of the restaurant where guests can also sit and eat, plus a glass-fronted wine cellar, including a private dining space next to it. Under the banner of “world cuisine”, the chefs serve up dishes that are based around Argentinian and local recipes but with nods to other food cultures (particularly France, Italy and Spain). Dishes that impressed us here were the burrata with a compote of Mendoza tomatoes, Char Siu sweetbreads, fideuá with octopus and seafood, leg of lamb with Calasparra rice paella, handmade pasta, and their red berry pavlova. The use of the Josper oven, which adds character and depth to many dishes, is one of their hallmarks!
