The ascent to Grad Tabor castle in Laško, founded in the thirteenth century and, after centuries of history and varied use, transformed today into a gastronomic restaurant of romantic fascination, is well worth making. In this suggestive setting, self-taught chef Marko Pavčnik expresses a cuisine that is personal and unmistakable, little influenced by passing trends, and capable of celebrating the territory with creativity and contemporary sensitivity. Great attention is paid to quality: local ingredients, foraging, and whole-animal cookery. The dishes, with their clear and well-defined flavours, tell the story of Slovenia with elegance, as in the smoked trout with elderflower sauce. To appreciate the proposal fully, a tasting menu is recommended. The experience is completed by a rich wine list centred on Slovenian labels, among which the whites of Styria, a region renowned for wines of great character, stand out. In summer, the panoramic courtyard offers a truly singular atmosphere.
