The head chef, who hails from Chaoshan region, specialises in the cuisine of his hometown. Try the marinated meat platter to sample a few of his signature items and their layered flavours. Deep-fried cloth-wrapped tofu in premium stock boasts a crispy crust and velvety centre. The mild soybean flavour works well with the umami-laden broth.
