The beautiful island of Öland is famous for its wild herbs, and that’s reflected in the cooking at this historic hotel’s restaurant, where the chefs enhance their elaborate dishes with thyme, basil and a host of other flavours from the 100-variety-strong garden. The original, boldly flavoured cooking comes in a tasting menu format, marrying classical techniques with subtle modern ones in dishes such as pan-fried red kingfish with spring chlorophyll, pickled cloudberries, saffron butter sauce and bronze fennel. The accompanying wine list is a real treasure trove for oenophiles.
