Life, both professionally and personally, often demands constant growth in order to stay ahead of the curve, that famous ‘renew yourself or die’ mantra that countless chefs have espoused in their culinary philosophies. Chef Álvaro Garrido, always well supported in the dining room by Lara Martín, is no stranger to this dynamic and, right now, he is immersed in this process of reinvention, as he leaves the successful establishment in Marzana (said to be Bilbao's ‘indie’ district) for a larger venue in the heart of the Indautxu neighbourhood.His gastronomic proposal? He continues to champion signature cuisine with fusion elements, showcasing the products that his trusted local suppliers bring him day after day (fresh fish from the Cantabrian Sea, select meats, seasonal mushrooms, game, etc.). At the same time, he continues to allow customers to see the entire creative process, as the open kitchen continues to serve as the dynamic centrepiece.
