The range of dim sum at lunch is dazzling, with deep-fried taro dumplings full of shrimp and chicken being a stand out. Coconut-scented crispy skin chicken is a favourite for good reason. Chef Mai also worked with the hotel’s western chef on desserts, thereby enhancing his eclectic repertoire.
