L'avis du Guide Michelin
The garden at this restaurant has an immediate impact, with its beautiful plants, gazebo and parasols recreating the atmosphere of a seaside pine forest. At the helm in the kitchen, the young chef from Rome creates cuisine influenced by the surrounding region, including different types of delicious bread made from top-quality local flour and served with a creamy cuttlefish ink butter. His skilful and creative cuisine is showcased on two menus (Catarsi and Mimesi), featuring dishes such as artichokes with liquorice and thyme, and sole served with green tea and snow peas. Add to this elegant and professional service, plus an excellent selection of wines (including by the glass) and recommendations from the sommelier. We particularly enjoyed a 2016 Panizzi Vernaccia di San Gimignano Riserva, with floral notes and a pleasantly complex structure.
