Eating at Spetters is like sitting with your head in the clouds. Thanks to its location on the first floor of a building on Breskens marina, you have a fabulous view of the boats bobbing about on the Western Scheldt. The lounge atmosphere is nice and relaxed, and perfectly suited to Laurent Smallegange's cooking: original and fun, without pretension.This young chef makes a point of working with local produce such as eel and crab, which he enhances with fresh tangy notes and influences from around the globe. Each ingredient is given its chance to shine. Every dish is well thought out. An inventive Carabinero prawn dish brings out the saltiness of the shellfish, perfectly cooked veal sweetbreads are daringly combined with chives and the subtle oiliness of Eastern Scheldt eel: chef Smallegange's technique is certainly masterful but also playful.
